Prairie Cafe

The Story

      There are still a few ranches who, in an effort to keep tradition alive, will round up cattle with a horseback crew and wagon.  My wife’s great, great, great uncle Charles Goodnight was a celebrated true western legend and among many other things, invented the first wagon outfitted to cook and feed a large crew of men.  Named for its inventor it commonly became known as the “chuck wagon.” 

   Here the menu is beans, biscuits and beef and plenty of it.
