The StoryThere are still a few ranches who, in an effort to keep tradition alive, will round up cattle with a horseback crew and wagon. My wife’s great, great, great uncle Charles Goodnight was a celebrated true western legend and among many other things, invented the first wagon outfitted to cook and feed a large crew of men. Named for its inventor it commonly became known as the “chuck wagon.” Here the menu is beans, biscuits and beef and plenty of it. Roger DeWitt, Artist
